THE BEST BANANA BREAD
A couple of days ago I had some bananas that were just perfect for a loaf of banana bread. Over the years I have tried quite a few banana bread recipes and I always come back to this one. The original recipe came out of an old Bed and Breakfast cookbook. I thought maybe you'd like to give it a try as well!
I've made a couple of changes here and there over the years with the addition of cinnamon and extra vanilla. I also don't fuss much about the exact amount of mashed banana but keep it pretty close to the original. (Usually it's a tad over.)

Dry Ingredients:
1.5 C all purpose flour
1 tsp. baking soda
1 C granulated sugar
1/2 tsp salt
1 tsp ground cinnamon
Wet Ingredients:
1 stick real salted butter. (can use unsalted)
2 eggs
1 C mashed banana (aprox. A little over doesn't hurt)
1/2 C sour cream
1 C chopped nuts (optional)
2 tsp. good quality vanilla
Directions:
Preheat oven to 350
Grease and flour standard loaf pan
Cream butter and sugar.
Add eggs and beat well.
Mix dry ingredients and add to butter/sugar/egg mixture.
Mix well until fully incorporated.
Add mashed bananas and sour cream and mix well.
Pour mixture into prepared loaf pan
Bake for 55 mins to 1 hour
To test doneness of loaf stick a toothpick in the center. If it comes out clean it is done. In the event that the top is getting too dark, cover with aluminum foil for the remaining bake time.
This bread is easy to underbake so be sure you insert toothpick deep into the center of the loaf when checking for doneness.
