Tofu: It isn't as bad as you think!

As I posted in my last blog entry I've been on a bit of a diet "clean up" over the last several weeks. Several things contributed to this but part of my incentive was to try to figure out what my body was having an adverse reaction to. One of the categories I eliminated was dairy. This was tough as I LOVE milk, yogurt and cheese. I found a recipe for a frittata that typically would call for eggs and cheese. This recipe called for Tofu in place of the eggs (which I had also decided to eliminate for a time.) Now, I'd never tried Tofu although I must admit, being a "foodie" I have had a curiosity about it. I needed a breakfast alternative to my yogurt, granola and milk, oatmeal and milk, smoothie (with yogurt) breakfast. This recipe looked like a reasonable alternative. For those of you who don't know what Tofu is; It is made of soy bean curd. Ok, I know that probably doesn't sound all that appetizing but, c'mon, think about it... what ot...
