The "Luke" Garden

You may remember a few months back (May 7, 2012) a blog post about a randomly shaped new garden bed? I thought maybe you'd like to see what it looks like today. This morning we did a little rock rearranging. (Only one toe was sacrificed in the finishing of this garden.) Luke has done most of the hard slave labor for my garden beds. He's my "go to guy" for digging and hauling rocks around etc. I'm not sure what I'm going to do after he moves back to Abilene in a couple of weeks?! Here are the before and after pictures in an ever evolving process.   You'll probably notice that my raised veggie bed is looking pretty bare. If you live in Texas you know why. We are in between veggie seasons! In the next week or so another batch of tomatoes, squash, beans and peppers. Later on in September, spinach, kale, cabbage, broccoli, cilantro, onions, radishes, lettuce, garlic and a few other cooler weather crops will go in.     Posted with Blogsy

Spaghetti Squash Salad

Last week I got a chance to visit with a precious friend in Abilene. Since her husband was away while I was there we decided that "girl food" was the plan. Being that I've been really focused on eating "clean" I brought along a spaghetti squash and some other veggies that I knew my husband was never going to touch while I was gone. One evening a couple of other sweet friends joined us for some "girl food". I decided that since it was blazing hot outside, something cool was in order. After "surfing" the web for some possible alternatives I decided to make a couple of salads. One with the spaghetti squash and another with the kale.
