A Versatile Tomato Basil Recipe

I have an over abundance of tomatoes and basil right now which has led me to all kinds of great "concoctions". Here is one that is super versatile.   5-6 medium tomatoes sliced or chopped 1/2 C. torn basil leaves 2 shallots or 1 medium red onion sliced thinly 3-4 medium cloves of garlic finely chopped fresh ground pepper sea salt to taste olive oil - about 4 tbsp. balsamic vinegar- about 4 tbsp. Place all ingredients in a bowl, stir and let marinate for at least an hour.   Ways to use: Top toasted french bread slices and sprinkle with shredded parmesan for great bruschetta. Add navy beans (or other beans of your choice and baby mozzarella balls or pieces, farmer's cheese or feta. Mix with spring greens for a great salad. Add 3-4 C. cooked Quinoa, cucumbers, green peppers and cooked chicken for a great one dish meal Add 3 C. cooked pasta of your choice, 1 can of corn (drained),avocado, black olives, green peppers and either chicken, ham or pepperoni, mozzarella, feta ...
